At the start of the 19th century, Pontarlier became celebrated as France's absinthe capital after Henri-Louis Pernod established his famous distillery there in 1805. Driven by booming national demand, the industry eventually grew to include around twenty distilleries employing nearly 3,000 people before a nationwide ban on absinthe was enacted in 1915.
